Munchkin received an Easy Bake Oven for Christmas from her Uncle J. Originally, I’d been hoping to wait a year before pursuing this endeavor, but after thinking about it, I realized that now is a great time to teach her the basics of baking. The oven comes with 3 mixes: sugar cookie, yellow cake, and frosting for the cake. Dh asked if there were any healthier snacks that could be made in said oven, and I thought, Hmmm…I wonder? So, I searched on the web, and found mostly cakes, cookies, bars, and brownies. There were a few interesting-looking snacks like nachos, pizza, and such, but couldn’t really find a whole lot without buying cookbooks, some of which were already out of print. So, Munchkin and I decided to see if we could modify some of our regular recipes and actually cook them in her oven.

I did a bit of research to find out the temps, which tend to range from 325-350 degrees F., which is pretty good. Hotter than I thought, but this would work. 🙂

Yesterday, Munchkin had a stomach bug, so she couldn’t eat dinner with us of leftover pizza from Friday’s Rose Bowl get-together (Go BUCKS! 😀 ). Instead, I promised her we could try to make mini pizzas for lunch, and that she could make a couple in her Easy Bake Oven. Today, we did so for lunch, and it worked perfectly!

Easy Bake Oven Mini-Pizzas

What you’ll need:
1 tube refrigerator biscuits
Small amount of tomato sauce (pizza or marinara work just fine)
shredded cheese of choice (we used mozzarella that I shredded here at home–it was more economical, since shredded cheese costs a lot more for less cheese)
single THIN topping of choice (we chose pepperoni, since we didn’t know how well it would turn out)
the 2 pans that came with the oven
cooking spray
regular baking sheet

Preheat the Easy Bake Oven (also, preheat your regular oven–if you’re using it–to the specifications on your can of biscuits). Spray your Oven pans, and baking sheet (if using one) with cooking spray.

Open the biscuits, and flatten out 2 to fit into the small pans; they won’t fit exactly, and will pull away from the edges, but that’s okay. They’ll fill the pans while they bake. If you are also using a baking sheet, flatten out the remaining biscuits onto the sheet (I did this because I didn’t want to wait over an hour before I could eat my pizza! 😉 This is also great for parties, as well!).

Take 1/2 of a table spoon of sauce (this is not an exact amount, btw, as we used one from our regular tableware and scooped about 1/2 a spoonful) and spread onto the biscuits. Add a little bit of cheese (not a whole lot, if you’re using mozzarella, since mozz really spreads as it melts!), and a little bit of your single topping (we placed 3 pepperonis on each–only because that’s all that would fit on them once they’re baked). Make sure the topping is very thinly sliced–probably no more than 1/8″ thick, because as the biscuit rises, you might not get your pizza out of the oven unscathed.

Bake each pizza in the Easy Bake for about 10-11 minutes, then allow to cool a little before serving/enjoying. If using a baking sheet and regular oven for the rest of the pizzas, bake for the amount of time listed on the side of the biscuit can. Remove from the oven and allow to cool for 2-3 minutes before enjoying.
